It's no good any more.
They've treated every last bucketful
so it always tastes the same,
so it never separates
and so it rots instead of souring
My father used to say
'Homogenized, pasteurized and buggerized.'
And he was right.
They've ruined milk
just to kill a few bacteria
that the bureaucrats couldn't swallow.
And worse than that the ritual`s gone.
There's no more going out at first light
move a hundred drowsy cows
from the warm flattened places
they've created overnight;
to walk them
the same sequence every time
down the lane,
so many hard feet on gravel
the sound of a slow landslide;
and to push them easily into the bails
and strip heavy udders,
the cats coming on time
through the forest of legs
to lick milk off concrete as rough
as their own tongues.
It's not the same
to get up late in the city.
find a corner shop
and buy milk that tastes of nothing much.
Back then
the taste of milk
depended on the season and the feed.
The sweetest milk
was lucerne in the spring;
while the worst I ever had
was after all the cows got through
a broken fence
and gorged themselves
on the low leaves of excluded peppertrees.
That milk was sour and bitter
as the leaves themselves,
and it was days
before the last trace disappeared.
I'd hate to think
how many years ago that happened now
but even so
the taste is still strong.
It stays there,
a detailed obsession,
like the memory of being loved.

Már nem jó.
Addig kezelték, amíg
nem lett ugyanolyan az íze,
ugyanolyan az illata,
és elrohadt, ahelyett hogy megsavanyodna.
Apám szokta mondani:
„Homogenizált, pasztőrözött és elbaszott."
És igaza volt.
Csak azért rontották el a tejet,
hogy megöljenek néhány baktériumot,
amit a bürokraták nem tudtak lenyelni.
És ami még rosszabb, tönkretették a szertartást.
Nem kell többé hajnalonta kihajtani
az álmos teheneket
meleg vackukról;
nem kell sétálni velük
lefelé a dűlőúton
mindig ugyanott,
ugyanúgy,
és hallgatni kemény patáik puffogását
akár egy lassú földcsuszamlást;
és nem kell szelíden
beterelni őket a karámba
és megfejni mindet,
miközben a lábak erdejében macskák
sompolyognak érdes nyelvükkel
a friss tej körül.
Nem ugyanaz
későn ébredni a nagyvárosban
és a sarki boltban
ilyen-olyan tejet venni.
Régen
a tej íze
a szezontól és a tehén táplálékától függött.
A legédesebb tejet
a tavaszi lucernásnak köszönhettük;
a legrosszabbat akkor ittam,
amikor a tehenek
egy törött kerítésen kijutva
felzabálták
egy borsfa alsó leveleit.
Az a tej savanykás volt és keserű
akár maguk a levelek,
és még napokig éreztük
a szörnyű ízt.
Még rágondolni is rossz,
hány éve történt ez,
de az íz még ma is erős.
Bennem maradt,
elevenen és rögeszmésen,
mint annak az emléke,
hogy valaha szerettek.
